Lady Bird leaves a legacy of deep devotion to her family, (the late President Lyndon Johnson, two daughters, Linda Robb, and Luci, 7 grandchildren, and 10 great-grandchildren); and the environment.
A few years ago, Author-Speaker Shirley W. Mitchell attended a local book club luncheon. The hostess for the luncheon in her home contacted all the living first ladies and asked for their favorite recipe. She prepared all these favorite dishes for our lunch.
Lady Bird sent her CHOCOLATE NUT DROP COOKIES. May I share her recipe with you?
1 cup butter
I teaspoon soda
1 teaspoon salt
2 cups light brown sugar
4 squares chocolate
½ cup eggs (2or3)
2 cups walnuts, chopped
1 cup milk
2 teaspoons vanilla
3 cups cake flour
Cream butter; then add the sifted brown sugar gradually and cream until light and fluffy. Add the well-beaten eggs. Cream – Sift together the dry ingredients and add with milk alternately and mix until smooth. Add melted chocolate, chopped nuts, and vanilla. Fold into mixture. Drop by teaspoonfuls on oiled baking sheet one inch apart.
Bake at 375 degrees for 12-15 minutes.
Makes six dozen cookies.
She was certainly a virtuous woman, and her life is to be celebrated.
